Around Lake Lachuá in Guatemala, Mayan and Q’eqchi’ farmers cultivate cacao trees among bananas, cardamom, and coffee. After harvest, they ferment the cacao together with its sweet pulp. The pulp plays a key role in fermentation, but some of the excess can be extracted and later used to sweeten the chocolate. The result is a 100% cacao bar that delivers the intensity of pure chocolate, balanced by the cacao fruit’s natural sweetness.
