Our Project – Copenhagen Chocolate Lab

The world of cacao is vast, diverse, and endlessly fascinating. One of the things we value most is visiting cacao origins, meeting the communities behind the beans, seeing their work firsthand, and learning directly from the people who grow and process cacao.

Every visit deepens our understanding—not only of different flavor profiles, but also of cacao varieties, cultivation methods, and the many factors that shape chocolate long before it reaches the maker. These experiences have always been an important part of how we approach chocolate and the stories we share in our store.

This year, we decided to take these expeditions one step further. We wanted to explore what these beans could become with our own hands. That idea gave birth to Copenhagen Chocolate Lab—our small-scale bean-to-bar chocolate project, where we can experiment, learn, and share the chocolate-making process.

While we wait for our new space to be ready—a place that will give Copenhagen Chocolate Lab the home it deserves—we couldn’t wait to get started. So, we launched our first production through a collaboration with Beaningful.

Beaningful is a Lithuanian bean-to-bar chocolate maker that we have been working with for some time. Many of you may already know them from their popular Peru – Urubamba 70% chocolate bar.

In March this year, we spent a week together at their factory in Lithuania, bringing along our own cacao beans from Chinim Wawas and Takahashi. It was an intensive and rewarding experience. We worked through every stage of the bean-to-bar process—from developing roasting profiles and refining the chocolate to learning the art of molding—while working against a tight deadline to bring our first project to life.

The result is the very first chapter of Copenhagen Chocolate Lab.

We invite you to discover the origins of Chinim Wawas and Takahashi through our first two plain dark chocolate bars, now available in our store. We hope they offer not only a taste of exceptional cacao, but also a glimpse into the people, places, and craftsmanship behind every bean.

This is just the beginning, and we can’t wait to share the next chapter of our journey with you.
