Catongo is a variant of the Amelonado cacao, known for its unique albino trees. Unlike typical cacao trees with violet pigmentation, Catongo trees produce beans that are completely white when fresh, turning caramel-colored after fermentation.

Bahia, Brazil. Cacao is cultivated under the canopy and shade of big trees native to the Atlantic Forest, using an agroforestry system known as Cabruca.
